Extraction of Natural Colorant (anthocyanin) from buah mangsi (Phyllanthus reticulatus)

Abstract

The usage of syntethic colorants today can result wastes containing heavy metal that can cause health troubles such as cancer, exhalation syndrome, irritating eye, etc. Meanwhile, natural colorant is easily decomposed by bacteria on soil and doesn’t contain heavy metal so it can be good alternative of colorant respectively. ‘Buah mangsi’ (Phyllanthus reticulatus) is one of the natural colorant as it contains anthocyanin pigment. It has not been utilized optimally so far. The method that’s used in this research is by leaching (solid-liquid extraction). The aim of this study was to determine the appropriate solvent for anthocyanin extraction from ‘buah mangsi’, and its best possible operation. This research was started by preliminary research to determine the appropriate temperature’s operation. The main research was divided into three stages,those were : (1) to determine the appropriate solvent for anthocyanin extraction, (2) to determine the influence of extraction time to rendemen, and (3) to determine the highest rendemen of this extraction operation. The results showed that the extraction using aquadest at 30oC resulted the highest total anthocyanin. The highest rendemen was 11,175% for aquadest.
